We are very strict about microbiological control. This involves regular checks on wort and beer during production, the final product, and the yeast.

No corners are cut during the brewing process. We do not involve ourselves in such cost-saving practices as high-gravity brewing like some of the larger brewers. Every parameter is closely controlled to ensure that each cask, and each pint is as good as you would expect.
