To make good beer we start with the finest raw materials. Welsh water is renowned for its purity, and as it constitutes over 90% of your pint, its an important foundation for the beer. It is filtered to remove any impurities and is regularly tested for its mineral content.
The pale malt is exclusively Maris Otter, the finest malting barley available anywhere. Only this malt can provide the satisfying flavour that we require. Speciality malts such as crystal, wheat and Munich, along with roasted barley provide colour, flavour and body to the beer. We choose the best quality hops from around the world. Styrian Goldings are imported from Slovenia, while the counties of Herefordshire and Worcestershire in England provide Goldings. The Cascades used in Herald are sourced from their homeland in the Pacific northwest of the USA. By selecting our hops in this way we can be sure that only the choicest of each variety ever goes into our beer. The final and some would say most significant element, is of course the yeast. We have gone to great lengths to ensure that the yeast we use shall provide us with the right balance of flavours. It is microbiologically analysed on a regular basis, and new cultures are regularly introduced to the brewery to maintain quality. |
